Delicious One-Pot Dishes copyWhat caught our eye was the simplicity of both preparing and serving from a single piece of cookware in DELICIOUS ONE-POT DISHES, published this fall ($9.95) by food columnist, radio host, and cookbook author Linda Gassenheimer.

There is just enough of an ethnic twist and ingredients to make Gassenheimer’s newest collection of recipes recipes interesting – and in most cases, colorful and inviting as well.   Saag Gosh, an Indian Lamb Stew is one example.  It can be prepared in five minutes with a 15 minute cooking time instead of the usual much longer cooking time, although it still includes the freshly ground spices and fresh ingredients. Gassenheimer uses lamb cubes (instead of larger pieces of meat) and canned low-sodium, no-sugar tomatoes (instead of fresh) and microwaves the brown rice.

The few ingredients you might not have in your pantry are readily available in any supermarket. Another feature is next to no clean up, whether you’re using a skillet, Dutch oven, or a pretty casserole dish for the one-pot cooking is the quickest and easiest way to effortlessly create hearty and healthy meals.
