He worked the Rose Bowl Stadium as it would be his own small kitchen.  But when I asked him about his VPN insignia on his chef coat and if he knew American founder, Peppe Miele, he paid attention.  His respect and the significance for the history, integrity and authenticity of pizza is what has made his pies so popular. Margherita Napolitana D.O.C., the pizza that earned him the Vera Pizza Napolitana certification, the mozzarella di Buffalo is imported form the Campania region of Italy.

Italian cuisine always reigned in Southern California. Celestino Drago and his brothers who are from Sicily only strengthened this belief with their excellent, consistent Southern Italian cuisine and hospitality to match.

The people already won us over for the sold out Masters of Taste 2022 even before we got onto the field of the iconic Pasadena Rose Bowl.  Everyone was just so happy to to be out together with people.  The vendor participant were no exception. And coming back full circle to French cuisine, Chef Gabriel Capelli at historic The Raymond 1886 is Italian. But he served an unusual dish often found on French menus, Pigeonneau, or squab, on French menus. It takes a deft hand to pull off although the dish is prepared with young pigeons that have never flown. So it has a milder, and tenderer meat than an adult pigeon.

The twist on regional southern food that has captured the hearts of Southern California diners at least is “hot & spicy” fried chicken. The all heart service of Gus’s world Famous Hot & Spicy Fried Chicken helps keep it at the top of the list.

I have never understood why the universally appealing flavors and friendliest people the world serving it, Thai, was considered exotic. Re-enforcing the popularity with an eye popping, inter-active performance dish is 2019 Michelin Bib Gourmand Chef Vanda Apasadu of Ayara Thai.

Chef Vanda is the Host Chef of Masters of Taste 2022 and helped arrange an entire Thai Pavilion at the event. After working with Chef Tommy Tang, who is considered the father of Modern Thai cuisine after introducing it to Los Angeles and New York diners, I’m so pleased at this recognition.

Calogero Drago celebrates 15 years on Lake street, the only Drago eatery in Pasadena.  For over twenty-five years, Celestino Ristorante has been Pasadena’s mainstay for fans of its signature house-made pastas and risottos, seafood, organic meats, and the freshest produce.

Super manager  (holding down the fort alone these days),Mario, for creating a blue sky, al fresco Birthday Eve feast for two culinary stars and friends: Food Writer, Barbara Hansen, and Master Baker, Alex Peña. Mario makes it into a dream dinner from phone reservations to toasting the table with my favorite grappa.  As always, we were the first table, and last to leave!

And try as I might to study the outstanding menu and specials, it’s always Sicilian Pappardelle on Fabiano e Morelle (pheasant and morels). Ah. Morel Mushrooms, most commonly found in their dried form, are only available fresh for just a very brief period each year. The rich, meaty flavor and texture of these fresh honeycombed mushrooms are portrayed with simplistic elegance in dishes sI googled it and my own photos came up! “Marino” means “the sea,” and here fish and seafood star among the Neapolitan comfort dishes.   Sal is a familiar face at both wholesale fish markets and also local farmers markets.  And for the past decade or so, he also grew so many tomatoes in his own garden he started hosting “tomato dinners.” This year they were weekly, with the help of curated farms, and our first foray back into restaurant dining.

Los Angeles Magazine’s “best” pick restaurant host, Mario Marino, shares responsibilities.  Brother Sal (former owner-chef of Il Grano, La Bottega Marino), oversees the kitchen.  (Marino ristorante) is one of the 31 restaurants in Los Angeles to earn the The “Ospitalita’ Italiana – Seal of Authenticity”, after passing an extensive series of rigorous tests.

Dad Ciro (who passed away in 2009) created Marino Ristorante as an old school formal dining room in 1979.  The menu is respected for being  as fresh as the fish and seafood the brothers continue to carefully pick out each morning at the downtown markets.   Marino,  the first restaurant to feature whole Branzino (Chilean Sea Bass),  still offers it three ways: grilled, Blackened and baked in a coating of sea salt. And these days there are new innovative events to celebrate, such as the Italian Bike Tour dinners, which features menus from the towns visited by the bikers, and champagne meal pairings.

About the last people  to hug me out side my house (Wednesday before Friday  quarantine) were the Drago brother chefs.   I am so honored that they even know me because of their stature.  I can give the time and dates of “the best”  food I’ve ever had and often it has a Drago name on it:  (Celestino Ristorante two autumns ago and I can recite the menu); the “best” lamb chop (Chef Celestino handing it to me at the first Taste of LA ); the best food coma event when the Drago brothers honored a fellow chef and each restaurant covered a table for the Kidney Foundation at CBS in Studio City.  And, most recently, the bittersweet memory of the “best” take out from Drago Bakery. (Gerry Furth-Sides) “Half the fun is getting there” and, in the case of Drago Catering (3828 Willat Avenue, Culver City, CA 90232) tucked way inside of a Culver City maze of commercial streets (on the south side of Venice not in the cluster of commissaries under the freeway). Finding the Drago Bakery and Catering shop treasure it its own reward.  Let’s talk about that reward first.  The prepared food-to-go is scrumptious and perfect (casserole style) for take-out to make a meal into a feast.  To the Lasagna Bolognese, all we added for a main course was farmers market asparagus topped with homemade mayo aioli. Our lesson: After we remarked at the pan size of the lasagna we thought smaller than anticipated, and we were reminded it was sold by the pound, we are still eating soul-southing lasagna after a month!

This year’s 45th Annual AbilityFirst Festival of Fall will be Hosted by Phaedra and Mark Ledbetter brought over 500 guests together for one exquisite evening featuring more than 25 top chefs, restaurants, cocktail bars, wineries and breweries, along with a special live culinary experience, live music and much more.  The grounds were so expansive, it never felt over-crowded.  The crowd lingered till dark.

Golden Road Brewing will be pouring their California inspired craft beer, and Jones Coffee Roasters will be serving their globally sought and locally roasted coffee.

AbilityFirst provides a variety of programs designed to help people with disabilities achieve their full potential throughout their lives. (Gerry Furth-Sides, photo credits: Ralph Wolfgang, Acura-Hansen) Father-son managed Bone Kettle’s Father’s Day Specials in  Old Town Pasadenafeature bold Southeast Asian flavors from family-inspired recipes.   Citrus Brine Chicken Wings prepared with fried free-range chicken wings and charred lime start off a meal with a tart twist.  Loco Moco features grass-fed ground beef, duck egg, jasmine white rice, caramelized onions, and fried leek, or go for the sweet and savory Fried Chicken & Ube Waffles, served with black pepper honey sauce and watermelon cubes.  Partner and Executive Chef Erwin Tjahyadi created a special Lemongrass Pork Belly made with crispy pork belly, garlic infused soy, lemon juice, onions, tomatoes, and watercress cilantro salad – available during both Brunch and Dinner on Father’s Day.   Bone Kettle Sangria has the kick of chipotle pineapple, orange extract, and Pinot Noir.  Habanero lime, soju, cucumber juice, ginger ale, and mint does the same for the Cucumber Habanero Mule.

Bone Kettle‘s Dinner featured Steak Tartare made with St. Helen’s Ranch hanger steak, chili vinaigrette, lemongrass, and krupuk is a signature dish, along with Executive Chef Erwin’s famous Bone Marrow with scallion confit, grilled baguettes, red endive, baby frisée, mizuna, and apple rhubarb dressing.  Unusual beverages include Ice-cold Beers such as the Ommengang Hennepin Saison or Eagle Rock Amwolf Pilsner.   Entrées for a hearty appetite include the Singaporean Chili Lobster with Maine lobster, confit tomatoes, sweet and spicy egg sauce, fried onions, and herbs; Big Mouth Seabass cooked in a turmeric batter, with pan-fried Okinawa soba noodles, scallions, quail eggs, and fried shallots, and the unique Beef Ribs prepared with bone marrow jus, fried onions and herbs.

Celestino Restaurant shares Drago family recipes of the kind that Owner and Executive Chef Calogero Drago’s their own dad would have loved in Sicily, Italy.  They they feature local, seasonal Start with the flavorful Beef Carpaccio with porcini mushrooms and black truffle, or the classic Zuppetta di Cozze e Vongole Pepate made of mussels and clams with black pepper in a delicate tomato broth.   Chef Drago is preparing something for every Dad with specials like his luxe Linguini with Lobster and Crab, and savory Bistecca alla Fiorentina; a traditional Florentine porterhouse steak perfectly prepared for Dad.  Inspired Chef Luca’s mom visited the kitchen at Culina & Vinoteca – Four Seasons Hotel Los Angeles at Beverly Hills for mother’s day this year, and judging from the adoring kitchen staff,  everyone was inspired by her.  It will show in the Father’s Day Brunch Buffet at Culina & Vinoteca at the Four Seasons Hotel Los Angeles at Beverly Hills, that features novelty activities.

Lawn Games with the kids such as Bocce BallLadder Toss and Corn Hole.  Dad can also show off his best Golf Game to Culina & Vinoteca’s 9-Hole Put-Put as there will be an attendant collecting score cards that will each be entered into Prize Drawings for prizes such as Complimentary Meals at Culina & Vinoteca.

 At the Raymond 1886 Executive Chef Jon Hung The Raymond 1886’s spacious outdoor patio and historic Craftsman Cottage interior ensure a historic, easy Father’s Day Brunch with such favorites as  the Family Breakfast Platter,Chef Inspired Omelets, and the popular Breakfast Burrito, along with  the Brioche Bread Pudding topped with berries, yuzu curd, and whipped sour cream.   The famous Classic Cheeseburger made with ground Kobe beef, melted cheddar cheese, pickles, lettuce, tomato, and “Eva’s Secret Sauce” on a brioche bun is also available, with its perfect accompaniment of the bar’s Bloody Mary with Dirty Sue olive juice and an array of salts and spices.

Father’s Day Dinner options are equally appealing.  Oysters on the Half Shell served with a daily mignonette, or the Tartare, which changes weekly starts off the meal. Baby Gem salad with cherry tomatoes, pickled watermelon radish and green goddess dressing, or the Roasted Cauliflower with chimichurri, hazelnuts, and grated parmesan pairs with any of Executive Chef Jon Hung’s entrees.  Favorites include Seared Sea Trout with Vadouvan lentil, pickled golden raisins, brown butter, yuzu and hazelnuts; Lamb Chops served with fregola, rhubarb, mint and ricotta, and the Porchetta with Vongole and marinated cherry tomatoes.   Dessert from Pastry Chef Alexa Clark included Peanut Butter Mousse with Nutella cremeux, honeycomb, cinnamon condensed milk and lime gel, and Chocolate Bavarois served with Tahitian vanilla ice cream, pink peppercorn graham crumble and caramel.
