He worked the Rose Bowl Stadium as it would be his own small kitchen.  But when I asked him about his VPN insignia on his chef coat and if he knew American founder, Peppe Miele, he paid attention.  His respect and the significance for the history, integrity and authenticity of pizza is what has made his pies so popular. Margherita Napolitana D.O.C., the pizza that earned him the Vera Pizza Napolitana certification, the mozzarella di Buffalo is imported form the Campania region of Italy.

Italian cuisine always reigned in Southern California. Celestino Drago and his brothers who are from Sicily only strengthened this belief with their excellent, consistent Southern Italian cuisine and hospitality to match.

The people already won us over for the sold out Masters of Taste 2022 even before we got onto the field of the iconic Pasadena Rose Bowl.  Everyone was just so happy to to be out together with people.  The vendor participant were no exception. And coming back full circle to French cuisine, Chef Gabriel Capelli at historic The Raymond 1886 is Italian. But he served an unusual dish often found on French menus, Pigeonneau, or squab, on French menus. It takes a deft hand to pull off although the dish is prepared with young pigeons that have never flown. So it has a milder, and tenderer meat than an adult pigeon.

The twist on regional southern food that has captured the hearts of Southern California diners at least is “hot & spicy” fried chicken. The all heart service of Gus’s world Famous Hot & Spicy Fried Chicken helps keep it at the top of the list.

I have never understood why the universally appealing flavors and friendliest people the world serving it, Thai, was considered exotic. Re-enforcing the popularity with an eye popping, inter-active performance dish is 2019 Michelin Bib Gourmand Chef Vanda Apasadu of Ayara Thai.

Chef Vanda is the Host Chef of Masters of Taste 2022 and helped arrange an entire Thai Pavilion at the event. After working with Chef Tommy Tang, who is considered the father of Modern Thai cuisine after introducing it to Los Angeles and New York diners, I’m so pleased at this recognition.

Our favorite restaurant will be offering a traditional family-style holiday feast featuring a festive Thanksgiving Dinner Menu ($95 per adult, $50 per child ages 12 and under).

Guests will begin the First Course with a choice of Butternut Squash Soup with fried sage, pomegranate kernels, and aged balsamic vinegar, or the Arugula Pear Salad with shaved Pecorino, dried cranberries, fine herbs, and honey house dressing. The Second Course offers a choice between the Mary’s Free-Range Turkey Breast with Italian sausage, apple sage stuffing, house-made turkey gravy served with a classic cranberry sauce; Prime Rib Style Strip Loin Steak with a mustard herb crust, watercress, caramelized onions, horseradish cream sauce and au jus, Pan Roasted Atlantic Salmon prepared with tarragon, tomato, capers, grilled lemon and beurre blanc sauce, or Stuffed Roasted Acorn Squash served with forbidden rice, butternut squash, Brussels sprouts and cranberries.

Hospitable, Georgia’s Restaurant at the Long Beach Exchange will be preparing  regional “soul food”Thanksgiving Dinners this year. The Soulful menu will be under the watchful eyes of restaurant owners and operators, Nana Gretchen and Nika Shoemaker-Machado.

Dishes include Roasted Turkey over Cornbread Stuffing with Soulful Side of Mashed Potatoes and Gravy, one piece of Cornbread and a choice of one additional Soulful Side. (Gerry Furth-Sides) Georgia Restaurant’s week-end brunch option, new this fall, ranks #1 in hospitality on all accounts. From the calls to the restaurant, first with a question about hours, and then to hold a table (no easy feat to find the place for an outside) on the phone with Manager Kimberly (below on the left), the sense of being a welcome guest reigned supreme. Happy faces at the full tables were proof enough.

This is no easy feat during a shortage of staff, and in a plain-wrap box of place with order at the counter service. Yet it felt at all times like a leisurely, warm place in the deep south. It was a welcome sight to see full tables inside and out of people of all ages, families and colors.

Southern hospitality has always been a priority with the owners of Georgia’s restaurant, for any meal. Owner Nika Shoemaker-Machado told us, “We want people to come to our tables and enjoy a meal as if they were at our home. We are happy and excited about outside dining. Our staff is trained on hospitality, making each visit feel as warm as possible.” This is especially important since visits by Nika and Nana to the restaurants several times a week “to greet customers and give people a sense of family stopped with COVID restrictions.”

And “homey” is exactly what it feels like. Everyone we encountered was friendly and helpful, offering menu suggestions and asking if we needed anything.

Georgia’s newly expanded menu for brunch features Specialties, such as: Gretchen’s Jambalaya cooked to order with shrimp, andouille sausage and chicken, served over pasta or rice, and the Louisiana Tilapia & Shrimp made of spicy grilled tilapia and shrimp, with tomato Creole sauce served over rice.   

The sweet and savory signature layers Fried Chicken and a Belgian Waffle is served with maple syrup and honey butter. It is not an international favorite and one of the most popular regional exports from the deep south.

Georgia’s Restaurant is named in memory of patriarch George, with the addition of a single letter from each daughter’s name. The founder of Georgia’s Restaurant is Gretchen Shoemaker (known to everyone as Nana), a native of Philadelphia who married her high school sweetheart, George, and moved west to Lake Forest. While raising three daughters, Gretchen created successful catering business built on family recipes.

The business stopped when he passed away in the early 1990’s. And almost just as suddenly it was revived 20 years later into a brick-and-mortar restaurant by daughter Nika Shoemaker-Machado and her husband, Marlon Machado.

We met daughter Nika Shoemaker-Machado, co-owner of Georgia’s Restaurants, at the Newport food Festival in 2019! They were out of food early on!

The Georgia’s Restaurant menu is inspired by family dishes in Gretchen Shoemaker‘s successful catering business. Today the second of her three daughters,  Nika Shoemaker-Machado and her husband Marlon Machado, operate the enormously popular at lunch and dinner. Week-end brunch is their newest update.

Co-Owner Nika Shoemaker-Machado’s personal favorite, the hearty Steak and Eggs, features top sirloin steak and a side of blackened country potatoes.

Fried chicken is served in a variety of ways. Chicken and Waffles stars Georgia’s signature fried chicken, a process that begins with Co-Owner Marlon Machado’s Brazilian buttermilk brine and ends with a seasoned crispy cornmeal crust courtesy of Nana Gretchen’s very own grandmother, served on a Belgian waffle with creamy honey butter and maple syrup.

The vegetarian friendly Mardi Gras Omelet, featuring green and red bell peppers, onions, and cheese is joined by Georgia’s brand new Eggs Benedict.

Southern staples also include the Fish & Grits featuring Creole seasoned cornmeal crusted fried catfish, or the classic Shrimp & Grits made with Creole seasoned shrimp over a bed of savory grits.

Brunch beverages include a Bottomless Mimosas, hearty Bloody Mary  plus Signature Peach and Seasonal Sangria. Red Wine and White Wine by the glass or the bottleand craft bottled Beer round out the list. The first time I ate “soul food” was when I was a lifeguard in Detroit, working my way through college. I was one of only two (white) females on a staff of professional male (Black) athletes, and a couple of the them brought me as a joke. While they were joking around with each other during dinner, I had finished a fried chicken dinner plate! They could not stop laughing. I’ve felt the same about soul food ever since although it is rare to find these days.

Georgia’s Restaurant features southern cuisine with recipes long proven decades ago by founder  Gretchen Shoemaker in her successful catering business built on family recipes .   The “second generation” in this case refers to her three daughters now grown up with Gretchen becoming, “nana” to the family.   And the second generation “kitchen” is fast-casual practical rather than white table cloth or catered off-site dining.

The high-concept, fast-casual Georgia’s Restaurant came about when Gretchen’s second daughter Nika Shoemaker-Machado and her husband Marlon Machado proposed the restaurant to Gretchen to fulfill her lifelong dream of sharing her food on a grander scale.  Named in loving memory of deceased patriarch George, with the addition of a single letter from each daughter’s name, from the first, Georgia’s Restaurant in the Anaheim Packing Districtwas a success.

The menu is also efficient, written up in categories.  The Georgia’s Restaurant Menu is categorized in Small Bites such as the Piggy Cheese Fries, (crispy fries loaded with slow roasted BBQ pork); Nana Gretchen’s Fried Green Tomatoes(rispy coated fresh green tomatoes with a lemon aioli,) Chicken Wings, served with a choice of lemon pepperspicymildcrispy, or Georgia’s Restaurant’s signature BBQ seasoning.   Salad selections start with the vegetarian-friendly Georgia’s House Salad served with spring mix, red onions, tomatoes, and candied pecans; Seafood lovers can rejoice with the Shrimp Salad served with spring mix, roasted corn, red peppers, red onions, tomatoes and a mango sauce.  Salads with meat are featured, and included an abundance of healthy veggies as well. The  Tri-Tip Salad with grilled-to-order 1855 Premium Black Angus Choice tri-tip, spring mix, blue cheese, red onions, tomatoes, red peppers and Mandarin oranges features beef.  Poultry is the star of the  Georgia’s Blue featuring grilled blackened chicken, blue cheese crumbles, romaine lettuce and tomatoes.

Southern Soul entrees are in the category of Plate-Up that starts with  Georgia’s Restaurant signature Fried Chicken, adding a Brazilian touch with son-in-law  of cultures whi Co-Owner Marlon Machado’s Brazilian buttermilk brine combined with a seasoned crispy cornmeal crust courtesy of Nana Gretchen’s very own grandmother.  A personal favorite of Nika, the succulent Smothered Pork Chops are hand-tossed, pan fried, and covered in bacon gravy. “Most people are compelled to lick the plate clean,” jokes Nika.

The St. Louis BBQ Ribs, a half rack of slow roasted pork ribs in Georgia’s Restaurant signature house-made BBQ sauce, or the grilled-to-order 8 oz 1855 Premium Black Angus Choice Tri-Tip, or the farm-raised  Fried Catfish prepared with a Creole seasoned cornmeal crust.

True Southern- style Bowls include the Hoppin’ John served with slow-simmered black-eyed peas and deboned smoked turkey neck; golden Chili Mac and homemade Chili.  Georgia’s Restaurant Sandwiches include the  Spicy Andouille Po’Boy, with shredded lettuce, tomatoes, dill pickles, garlic mayo and Dijon mustard, served on a French roll. The Pulled Pork is made with slow-roasted, gently pulled pork, signature house-made BBQ sauce, and coleslaw on organic brioche.  BBQ Chicken features the signature house-made BBQ sauce, onion straws, spring mix, and sliced tomatoes on organic brioche.

 Georgia’s Restaurant desserts include Nana Gretchen’s include Southern staples, Peach CobblerSweet Potato PieLemon Cake, and Pound Cake with the added option of house-made ice cream in the à la Mode version.   Drinks include sodas, beer and wine curated to pair with dishes.

Mother and daughter firmly believe that it is the little touches that keep guests coming back, like the real tableware and cutlery used for dine-in guests, and the authentic conversations generated when the owners are at the restaurant, particularly Nana Gretchen, whose affection has earned her the nickname, The Hugger. “We are committed to ensuring that Georgia’s Restaurant captures the feeling of having a meal in our home,” adds Nika.
