The magnificent Los Angeles Trade Tech College setting magnified the already comprehensive day. Chef Conference 2023 already more than fulfilled its mission to provide information, inspiration, delicious food and drinks on a personal basis. Meeting up with industry friends and meeting new ones was another priceless aspect of the event. See how below.

The event began in the lobby of the Culinary Arts Building. Signs and students were posted all around the impressive campus to direct you to the building.

Lunch took in place in three entire state-of-the-art classrooms, each with their own work stations. One entire room was filled with the finest beef, lamb, duck and other protein. An entire room was filled with fish and seafood. The commonality was the each dish being prepared by top chefs at their best with flavors, texture and presentation. The food was representative of the finest sourcing and preparation.

We were in beef heaven. Featured: Cape Grim Grass Fed Beef from Tasmania, Black Opal Wagyu, Pure Black Barley Fed Angus, Gundagi Lamb and Stock Shop Sauces and Stocks.   First up was one of our favorite chefs, Jet Tila and wife Allison. We could not have gotten a warmer welcome. “Come on in over the ropes!” he called out.

Gerry Furth-Sides)  Greater Los Angeles Area is the most culinary and culturally diverse place in the world. This year’s ninth  Los Angeles Food & Wine, August 22-25, sets out to display this ethnic diversity, plus showcase international culinary superstars, headed by 25 chefs “showing off their most crave-worthy dishes that have proven their worth to the locals” hosted by Jet Tila.

Although there was a time, Virgina, where there actually was one food festival a summer, in this era of one (or two) major events a week, you know need a playing card to sort out the best of ethnic and California Coastal cuisine experiences.  This year’s ninth  Los Angeles Food & Wine, August 22-25, is one of the best, having developed open-open festival events and smaller, more exclusive ones across the city. Los Angeles Food & Wine launches their event on Thursday evening with a series of dinners at restaurants across the city. The action then movess to the historic Barker Hangar at Santa Monica Airport, one of LA’s premier event spaces, for the rest of the weekend. Among the 14 culinary star-studded events:

LA’s Faves & Craves: In one short stroll, festival-goers can take in the breathtaking diversity of L.A.’s culinary landscape in one convenient (shaded!) place in Santa Monica at the Barker Hanger.   LA’s own Jet Tila, whose family owned the first major Thai market and restaurant,  hosts a showcase of the most crave-worthy dishes of 25 local chefs. The city’s tacos, pizza, hot dogs, donuts, fried chicken and a wealth of Asian-inspired specialties share one location for one glorious afternoon. Crave worthy drinks to complete the food include  75+ wineries, cocktails from House of Suntory, Bulleit, Aperol, & Diane Mina’s Garden Grown Cocktail Blends and British Guinness beer.

The city’s own Chef, Nancy Silverton, hosts San Francisco legend,  Jeremiah Tower (“The Last Magnificent”) at her own restaurant.  The event,  The Legends Dinner at Chi SPACCA: The widely credited father of California cuisine Jeremiah Tower joins Chef  Nancy for a one-night-only wine and food pairing meal for 40 festival-goers fortunate enough to snag a ticket.

Another more intimate event is Dinner at Otium:  Winner of Netflix’s “The Final Table”,  2018 season winner, Chef Tim Hollingsworth of Otium, one of all all-city favorites.  The chef shares the spotlight with rising star chef Travis Swikard at Hollingsworth’s downtown masterpiece, The Broad museum-adjacent Otium.

The Epic Burger Throwdown with Alvin Cailan: In a city known for great burgers, the best are going bun to bun to win the coveted LAFW Golden Burger Show Trophy. Host Alvin Cailan, star of YouTube’s “The Burger Show,” will join celebrity judges Seth Rogen, Tiffani Thiessen and Adam Richman in this juicy battle of the beef.

Meat Me at LAFW’s Great Steak-out & BBQ: Meat master Curtis Stone of Gwen Butcher Shop & Restaurant and 25 other great tamers of the flame collaborate to turn out a memorable feast complemented by surf, sides, caviar and Big Cabs to bring guests the essence the nation’s greatest steakhouses and BBQ joints.

Chef Jazz Singsanong (Jitlada) is joined by a star line up of celebrity chefs at the tribute night to celebrate the life of her beloved late Chef Tui Sungkamee (Jitlada). The evening at the Line Hotel, May 8 will feature tastings, food stations and live entertainment by DJ Chris Holmes and DJ Zo.

“Extra spicy cuisine” helped the brother and sister duo to fame, including Jonathan Gold’s “Top 101 List” in the LA TIMES and in his film, “City of Gold.” But it is the total package that makes this restaurant a star. Hospitality, so characteristic of the Thai people – who have never been conquered as a country because they simply opened the doors to newcomers and learned from them- is at its highest here.

Brother and sister chef-owners, Tui and Jazz Singsalong, alone are as much of a draw. Even the first time you meet them, they make you feel like family. They made it feel as though it was their party and you made them the happiest people on earth that you were also there.

Another sign of no-reservation policy Jittlada’s popularity is the long snaking line evenings to get into the double storefront space that is truly tucked into the corner of a strip mall on a non-descriptive Hollywood Boulevard in East Hollywood.

 

In 2017 East Hollywood Certified Farmers’ Market honored Popular Chef Tui as part of a celebration of their expanded days this spring, 2017, where the chef shared his expertise in a demo.

Chef Jet Tila, a native of Los Angeles, has been the “official Thai Food Ambassador” since 2013.  We applaud him for adding his own definition to his role as  Ambassador of representing Thai food and culture at food events and in media around the world.   Chef Jet also believes that it means, ” rallying everyone to create an extensive community.

Community-minded, the Border Grill has participated in, and been honored at, Planned Parenthood Food Fare for 25 years. (above and below)

At Market City Cafe chef-owners, Chipper Pastron and Sal Casola, Jr., have been translating the authentic recipes of Sal’s family into consistent, appealing fare for a quarter of a century.

They have also experienced bringing authentic food from Italian – Roman square pizza, the top Italian charcuterie, cheeses and freshly made pasta to Pasadena and it was a “no-go” replaced by Jakes Burgers.

Last but not least the consummate host at the most popular gathering place on the westside, India’s Tandoor, Brentwood, Matin Shah is always on the lookout to please his guests and the first choice for events, such as the fundraiser below.

This is the “go-to” place where you always feel at home and know you will be treated in a special way.  Nothing is too much for him to do for his customers.

Matin takes care to introduce dishes from his own region of Bangladesh to his guests.  In 2017 he even created a special Off-the-menu feast of a number of these dishes.  So far they have been a success.

When I thought that another restaurant owner was alone on her birthday, of course, I phoned up Matin and welcomed us over.  He prepared a little dinner and dessert.  And when I looked at the photo of him and the guest, I could see he had fallen asleep he was so tired!

Usually, Matin prepares or purchases a favorite cake to celebrate each and every guest he knows by name.  This year he was startled to be presented with a cake of this own to celebrate his birthday!

(Gerry Furth-Sides) Thai people own a reputation for open-door hospitality plus a love of pomp and circumstance.   They boast of their brilliant, colorful, balanced and varied cuisine.  After all, they are a country that has never been conquered by outside forces – they seem simply to invite potential invaders in and fold the best of the new culture into their own.

The 2016 launch of the  Chang Sensory Trails in Los Angeles  (www.changbeer.com) gives living  proof of this all The event lives up to its promise of being, a “multi-sensorial playground to create new memories around Thai iconic flavors.”

Engaging celebrity chef and Thai Culinary Ambassador Jet Tila  curated a unique menu for a traveling pop-up vip restaurant based on his personal memories – along with an informative, entertaining and crystal clear narrative to showcase Thai food, which pairs beautifully with the light Chang Beer.

Chang Beer is compared to Miller’s Lite Beer as opposed to Singha, which is more like a heavier Heineken. Chang Beer thus pairs perfectly with any Thai dish from more delicate to spicy flavored.

Meanwhile the gorgeous Thai garnishes were places on the table.  We went through all the six limes with our dishes.  At our table, we used up all the limes and a couple more on our dishes.  Newspaper publisher Boonyakak (Dang) Charoenkitkan  explained them all to us.

Chef Jet oversees the kitchen’s first dish, A Night of Yum (deliciousness) with Miang Kham, Stuffed Betel Leaf with palm Sugar Jam.  The little leaf is folded into a package and eaten with your hands.  Jet also gave the “insider’s” tip of never asking for chopsticks the minute you sit down in a Thai Restaurant – they are only used for noodle dishes.

“The First Dish My Grandma taught Me” turned out to be Nam Prik Ong, Pork Chili Dip, tiny Carrot, Long Beans, Sticky Rice and Chicharron.  The exquisite dish highlights each ingredient in the perfect two or three bites –   just look at the three brussels sprout leaves!

“Prosperity & Pomelos” was the heading of the Yum Som O, Grapefruit Crispy Rice Salad with Shrimp>.  Jet explained that all citrus fruit is popular around the winter new year holiday season because it represents prosperity — so to spotlight this during the holiday or use up leftover citrus as Jet’s family did after the holiday (!) this refreshing salad is perfect.  The citrus pomelo also adds the “acidic” or tart to the dish.

From Lampang with Love was the title of the Khao Soi Noodles with Braised Beef and Curry Leaf.   Chadaka (Burbank) serves Khao Soi in the form of a curry noodle chicken soup.  Chef Jet explained that the ‘khao” referred to chiffonaded rice noodles.  It is the “sister” to Ramen noodles.  The dish is very much dependent on the fattiness of the noodles so to achieve the closest version to it, Tila uses the egg noodles in the United States.    the varied beef is extra tender for this dish, braised to retain its moisture.

“Yum” deliciousness and balance was the title of the Khao Klook Kapi, Shrimp paste Fried Rice with Garnishes.   What a little beauty – the delicate additions were pork belly and Chinese sausage.  “Who doesn’t want Chinese Sausage on all their dishes,” laughed Jet.  Jet also revealed that the famous Thai Temple is now open again.. home to the best mango sticky rice anywhere.

In fact, Jet claimed, “LA has the best Thai food in the United States. New York doesn’t begin to compare to it.  They just don’t have the same ingredients (says the son of Bangkok Market!)

The following evening came the Victoria Garden Party in Santa Monica event open to the public, with six vendors, four from one family. Upstairs the  VIP Instagram contest winners were treated to Jet Tila’s Memory Menu.   All the food was carefully described on huge walls and on the booths themselves.

The party was filled with Thai personalities.  Above Sereechai Newspaper publisher Boonyalak (Dang) Charoenkitkan and Walaipan (Wendy) Kesthong of the Thai Association of Southern California  toast the event in the photo above.  Thais love to tell you their nicknames, which say everything about these affectionate party-loving culture.  The Jittlada crew toasts in the photo below.  Big personality and restaurant mainstay, “Jazz” is on the far right.  Jittlada was one of the restaurant starring in the “City of Gold” film this year.

Generous and incredibly delicious tastings include (but are not limited to) Papaya Salad, Jade Noodles, “Pork Jerky”, and delicate finger desserts. Guests also enjoy a personal tutorial at a grocery store in town, with insider tips for shopping quintessential Thai ingredients. An extra-special gift from Jet are recipes from the tasting stops.

Chef Jet Tila is known as one of the kindest, most fun, and humblest celebrities in the city.   When culinary personality and best-selling author Anthony Bourdain brought his “No Reservations” crew to Los Angeles he turned to Jet, Thai Town’s honorary Mayor, to show him around. That resulted in a memorable Thai Town segment for Travel Channel’s hugely popular “No Reservations” series.  So it’s no surprise that Chef Jet was appointed as the official Thai Culinary Ambassador to the United States by the Royal Thai Government in 2013.

This is a rare opportunity.  Savvy food tourists can now personally experience that same, ultimate, insiders’ tour, previously available only to prominent journalists and distinguished visiting chefs with celebrity chef and national culinary personality Jet Tila as their personal guide.
 Second generation Thai business owner Jet Tila  grew up in the area, where his family owned and operated the landmark Bangkok Market. Thai customers often frequent restaurants for one particular signature dish, and Jet will showcase the best of these for his guests, including papaya salad, jade noodles, and a rich coconut banana fritter.  You may have seen it on television since Chef Jet recently gave a preview Thai Tour to Eye on LA.
Space for each tour is limited to 15 persons so participants are encouraged to sign up early. Meeting locations and other specific tour details will be sent to guests upon confirmed reservations.
