(Gerry Furth-Sides) Cheers to celebrating National Tequila Day on July 24th with curated cocktail recipes, a description of the tequila family tree and the merits of tequila that will tease out even more love for Mexico’s beloved drink.

Tequila is named after the 16th century town in which it was first produced. Even now only five states in Mexico that produce the spirit are allowed to use the tequila designation: Jalisco, Tamaulipas, Nayarit, Guanajuanto, and Michoacan. The freewheeling tequila process making has not only been refined over the centuries but now is a strictly enforced established process.

Herradura, for example, introduced its reposado (aged) to the tequila industry in 1974. It grew to international popularity within decades. It is an amber-colored tequila with notes of cooked agave, vanilla and butter complemented by a smooth and sweet finish with a touch of spice.  Herradura is better suited to cocktails than for sipping. Fun fact: Herradura in Spanish means “horseshoe.” The story goes that the owner found one in the agave fields one day and named the company.

We celebrate tequila as a separate beverage even though it is a mescal. That’s because tequila can only be made from one kind of agave plant: Blue Weber Agave (agave tequilana). And it must originate in specific regions of Mexico. Mezcal, on the other hand, can be made from 40 of kinds of agave, wild or cultivated. And Mezcal has its own day of honor in September!

Tequila fits into the realm of mezcal much like champagne, which is named for a specific region in France yet fits into the category of wine. For most drinking purposes, you can easily substitute a mezcal for a tequila without really changing the taste of a cocktail but tequila is usually meant for sipping.

This is why a tequila like Patron, known for its purity, is perfect on its own. Apparently we have shown our love of it; we have two suitcases of tequila gifts in our bar now!

Patron is made from 100% blue Weber agave grown in the highlands of Jalisco. The agave is harvested by hand and cooked in traditional brick ovens before being crushed and distilled. The beautiful distinguished bottles add a distinctive, recognizable touch. The numbered bottles give it an extra cache.

SMOKED PEAR SOUR with El Silencio Mezcal

The special smoky taste of Mezcal comes from the way it is processed. The heart of the agave plant, the piña, is traditionally slow-cooked in pit ovens, giving it a characteristic smoky flavor. The type of agave plant, as well as the aging process makes each mezcal batch unique.

Mezcal is produced in several states in Mexico, the most prominent being Oaxaca. These days, there are many more artisan versions fermented entirely with farmed agave or with wild agave. According to Philip Dobard of the Center for Culinary Culture, there are a handful of distilleries in all of Mexico producing spirits for 200 companies, Philip is a treasure trove of information he always shares with wit in crystal clear explanations. Since we were on this mild antibiotic this week-end, this cocktail just had to be included. It can also be made with tequila.

The Hernandez Family has been distilling at their El Rey Zapoteco Distillery in Matalán, Oaxaca since 1960. They are the oldest artisanal Mezcal brand in Oaxaca, which is considered being the heart of Mezcal making. They produce seven varietals on their own land, making El Rey Mezcal a true estate producer of premium Mezcal.

Want to make your own mezcal? Try sotol, a plant that grows all over southern California, Philip told me. While mezcal is made from agave, sotol is made from a related group of plants in the dasylirion genus, referred to as sotol in Spanish and “desert spoon” in English.

An easier way to get ready for National Mezcal Day is to practice making drinks with El Silencio Espadin. Mezcalero Pedro Hernandez hand makes the spirit in small batches, designed for high-end use in mixology. Cheers!

Ulises Torrentera was largely responsible for carrying the message of authentic, artisan mezcal in the US, transforming  the reputation of this spirit formerly regarded as a peasant drink.  Torrentera is always pleased to share his knowledge of the current finds – wild or farmed agave.  All of the bottled under his Farolito brand, are curated by mezcal missionary Torrentera.

Although Mezcal has only recently become an infamously popular drink, Torrentera had already documented the first of his findings in the book   Mezcalaria, in 2002.  Other emblematic books about Mezcal followed.  Farolito Mezcal is the exported brand from his famous In Situ Mezcaleria in Oaxaca City. Ulises has spent the last two decades touring palenques of the different regions of Oaxaca and beyond to produce the highest quality, most authentic mezcal.   His intensive searches include both farmed and wild agave.

Tequila and mezcal primarily come from different regions of Mexico although some overlap.   Mezcal is produced in nine different areas of Mexico. They include include Durango, Guanajuato, Guerrero, San Luis Potosi, Tamaulipas, Zacatecas, Michoacán, Puebla and Oaxaca, which is where upwards of 85 percent of all mezcal is made.  Tequila is produced in five places: Michoacán, Guanajuato, Nayarit, Tamaulipas and Jalisco, which is where the actual town of Tequila is located.

(3) Nixon Chops & Whisky in Whittier has three separate bars to enjoy mezcal, two easy lounges open to the street.   Mezcal is a specialty at the under the capable eye of Barkeep and mixologist Greg who looks over 200 whiskeys in the house.  Manager Lucy’s choice for us was a SILVER MEZCAL ARTESANA, the best.  The agave type is a special San Dionisio Ocotepec blend of Tobola and Espadin, matured seven to ten years, from Oaxaca.  Distilled twice in a copper column, it is close to 42% alcohol by volume and has a smokey finish to the notes of grilled pineapple, papaya and mango with lingering floral notes to the taste.

The simple thing to remember is that All Mezcal is Tequila but not all Tequila is Mezcal — because of the unique way that mezcal is processed from a variety of agave plants (which also make up tequila) that instills a special smoky taste. The heart of the agave plant, the piña, is traditionally slow-cooked in pit ovens, giving it a characteristic smoky flavor. The type of agave plant, as well as the aging process, make each mezcal unique. It is produced in several states in Mexico, the most prominent being Oaxaca.  These days, there are many artisan versions distilled entirely with farmed agave or with wild agave in Mexico. Many mezcals are made with sustainably sourced highland and lowland agaves.

The  ‘margini’ is the Smoke on the Water created by Garh Dokken of the Craft House in Dana Point, CA. The festive, smokey cocktail features Nosotros Reposado withnotes of luxardo cherries, vanilla, and blood orange topped with a charcoal egg white foam. ¾ oz Nosotros Reposado

¾ oz orange juice (preferably blood orange)

¾ oz cherry heering

¾ oz dry vermouth

3 dashes vanilla extract

Shake and double strain into a chilled coupe

San Baltazar Cup

Ingredients:

  • 2 oz. Mezcal El Silencio Espadin
  • 1 oz. Lime Juice
  • 0.5 oz. Agave Nectar
  • 5 Slices of Cucumber
  • 1-2 Slices of Jalapeno
  • Pinch of Salt
  • 1 Splash of Soda

Instructions: Muddled and shaken into Collins glass on the rocks. Serve with cucumber ribbon garnish.

Ingredients:

  • 2 oz. Mezcal Espadin
  • 0.75 oz. Lemon
  • 0.75 oz. Curacao
  • 1 Egg White

Instructions: Dry whipped, shaken and poured into sour glass. Serve with dehydrated lemon wheel garnish.

In addition to learning new tricks and tips from expert Vicente Díaz, star mixologist at Grand Velas Riviera Nayarit, below are just a few recommendations from Díaz for drinking the spirit:
  1. Use a medium to large glass, such as a champagne flute, instead of a shot glass.  The extra space encourages the oxygenation process and helps release the tequila’s natural flavors and aroma.
  2. When going to take the first sip of tequila, first swirl the tequila around in the glass to help the oxygenation process. After the second sip, inhale through the nose, swallow the spirit over your tongue, and exhale. This process softens the tequila’s flavor.
  3. If you are drinking tequila while eating, research what kind of tequila pairs best with certain dishes. Silver tequila pairs well with seafood, salads, or pasta, for example. Reposado tequila, which embodies a caramelized flavor, goes well with enchiladas, tacos, and a hot soup or creamy vegetable soup.  Pair your dish with anejo tequila that stands up to the flavor when you are pairing it with spicy food. Ultra-aged tequila is best paired with bitter or bittersweet foods, or milk chocolate. Gold tequila pairs best with sweet flavors or with high-fat cuts.

(Gerry Furth-Sides) The truth of it is that we had such a good time at the brand new, mezcal bar at the front of Laurel Hardware in that we forgot the trials of rush hour traffic getting to WEHO, and the next day wasn’t sure how we got back – parked.  And the next day we were very surprised to find our car backed into the driveway – a driveway with a post in the middle.  (photos below are by EDLT Photography)

No wonder. Mezcal is a distilled spirit that can be produced from many varieties of agave plants. It is produced in several different states in Mexico, the most prominent being Oaxaca. The heart of the agave plant, the piña, is traditionally slow- cooked in pit ovens, giving it a characteristic smoky flavor. The type of agave plant, as well as the aging process, make each mezcal unique.

Since its 2012 debut, Laurel Hardware has become a West Hollywood district staple renown for its superb food and fancy beverage offerings. There have been lines outside the door since it opened in 2012.

And once again proves the restaurant’s old-fashioned hospitality and enormous popularity.  Maybe it’s just in the bones of this unique location.  Proof came before we arrived and called about parking.  The hostess, Nancy, answered with instructions she had, then called back within minutes to give specifics using our caller ID.  Wow.

Hand-carved wood floors with Italian-imported marble inlay, wood panel walls that have been precisely book matched, luxurious plush seating composed of warm- colored fabrics by Loro Piana, a subtle handcrafted wood fireplace mantle and vintage mirrors on the table tops, behind the bar and lining the ceiling that give the room a mysteriously sexy, intimate and yet spacious feel. Additionally, the bar is accented with polished brass and is topped with extravagantly grained black marble.

 This gleaming polished brass material carries into the bathroom, which is designed in the same striking, dark, elegant Art Deco style with an exquisite floor pattern of alternating Connemara and Sahara Noir marble.
