(Gerry Furth-Sides) An array of colorful, top quality ingredients fill the assortment of ethnic and popular American regional dishes designed by owner Charles Laing at Loving Hut, Claremont.   Tucked into a food court anchored by a movie theatre, Laing has rightfully gained a following ever since he opened.

Each menu is unique to every Loving Hut location due to local supply & local demand, as well as the philosophy of the owner.  At Loving Hut, Claremont, for example,  fresh produce and products are often more available than in other parts of the country because of the Southern California climate.  The owners oversee the kitchen and have developed a more Asian-inspired menu because the ingredients are healthier and lighter than Western fare,  while still being colorful and appealing.

This gorgeous golden, rich but light butternut squash soup is seasonal but has already proved so popular it will always be on the menu when available. This mushroom soup is dense with flavor and healthy ingredients.

Quinoa takes the place of rice in this Loving Hut sushi.  The quinoa adds a nutty, interesting  taste to the classic item.  The sushi is filled with avocado, shaved carrots and wrapped in nori paper.  A tart sauce brings out flavors even more.

Avocado also provides the rich layer in this popular panini that also includes tomato, eggplant and greens.  The crunch of the thin-sliced sourdough bread is satisfying as the ingredients.  A salad completes this dish, which proves that vegan will satisfy all tastes.

Vegan carrot cake, one of many desserts in the glass case at the order counter, is as irresistible as the brownies and other favorite American regional desserts.  Moist and dense, it is finished off with caps of non-dairy cream.
