(Gerry Furth-Sides) Making cocktails properly has always been a considerable skill. These days it is considered an art. Knox & Dobson President Rob Levy and Creative Director Peter Lloyd Jones, who is the formulation and product development director, agree. They would know, being involved with highly esteemed bars, (The Raymond 1886Everson Royce Bar). So they found a way to create the perfect pre-mixed drinks in Knox & Dobson’s new bottled cocktail collection. Please check the website for vendors at //www.knoxanddobson.com. Each 200 ml bottle easily contains two servings. Each bottle costs $15 and the set is $70.

It starts with the shape and look of the bottles. The indigo, translucent color is an instant classic. At our tasting, everyone was so impressed with the hexagon-shaped shape of the bottle and flat sides that makes it easy to hold and almost impossible to roll around if it tips over. “This is absolutely perfect to take to events, such as the Hollywood Bowl,” emphasized guest, Ingrid Day. “It even feels so good in the hand.”

We did our tasting with well-experienced catering company bartender, Donald Herman. He advised chilling the glasses for the Martini. We worked out way from cocktails with the least amount of ingredients to the most, additionally from the least sweet to the sweetest. Bartender Herman praised each and every one of the cocktails because they were “made with integrity and accuracy.” I add that this is the perfect way to learn how to make a cocktail at home with Knox & Dobson setting the standard for taste.

A “proper” martini in its original form contain gin and vermouth. Liquor historian David Wondrich writes that bartenders have always referred to a martini made according to the original recipe as a “silver bullet” or a “crisp cocktail” because of its incredibly clean and fresh flavor.

Donald garnished each martini with imported Spanish queen olives. They added to the somewhat herbal flavors of the gin. Perfection. When serving the cocktail at home, it’s easy to make variations such as a “dirty Martini” with olive juice. It also zings with a lemon twist, or even without an olive for a dry taste.

The Knox & Dobson Improved Whiskey Cocktail is rightfully labeled “improved.” It is straight aged rye whiskey, Maraska Maraschino Liqueur and Angostura bitters.  This cocktail has a spiced flavor profile, including American oak, citrus, along with bright and deep cherry notes.

Even though a recognized “cousin’ of the Martini, origins of the Manhattan cocktail are not as well known. They seem to lead to the Manhattan Club, a social organization for Democrats in New York. More specifically, Lady Randolph Churchill, Sir Winston’s mother, ordering a combination of rye and vermouth for a toast during a visit to the club.

The Manhattan is prepared with spicy rye whiskey, sweet vermouth and two dashes of Angostura, stirred with ice to chill, and then strained into a Martini glass. Farnish with a brandied cherry makes it upper class.

We loved the Old Fashioned with its amber color. Knox & Dobson advises popping a Luxardo Maraschino cherry into it. The cherry works to balance the big citrus flavor and turn it bright, fresh and fruity. Our group agreed that we loved it with and without cherries.

The detailed aromas and flavors of the Old Fashioned to look for are freshly expressed orange peel, caramelized citrus, peppered almonds, raisins, and toffee with a supple, sweet medium body and a warm, intricate, long finish suggesting hints of licorice, violet, and sweet oak.

Italian cuisine always reigned in Southern California. Celestino Drago and his brothers who are from Sicily only strengthened this belief with their excellent, consistent Southern Italian cuisine and hospitality to match.

The people already won us over for the sold out Masters of Taste 2022 even before we got onto the field of the iconic Pasadena Rose Bowl.  Everyone was just so happy to to be out together with people.  The vendor participant were no exception. And coming back full circle to French cuisine, Chef Gabriel Capelli at historic The Raymond 1886 is Italian. But he served an unusual dish often found on French menus, Pigeonneau, or squab, on French menus. It takes a deft hand to pull off although the dish is prepared with young pigeons that have never flown. So it has a milder, and tenderer meat than an adult pigeon.

I have never understood why the universally appealing flavors and friendliest people the world serving it, Thai, was considered exotic. Re-enforcing the popularity with an eye popping, inter-active performance dish is 2019 Michelin Bib Gourmand Chef Vanda Apasadu of Ayara Thai.

Chef Vanda is the Host Chef of Masters of Taste 2022 and helped arrange an entire Thai Pavilion at the event. After working with Chef Tommy Tang, who is considered the father of Modern Thai cuisine after introducing it to Los Angeles and New York diners, I’m so pleased at this recognition.

(Gerry Furth-Sides) Los Angeles as the city with most diverse ethnic cuisine in the world also boasts “secret garden” venues that surprise and delight. Two are classics that have renewed themselves with outdoor dining. We start with a favorite, actually a “sand garden,” Back to the Beach, and work our way east. On the list: Tiato Kitchen + Venue (Santa Monica); newly realized back patios of Marino Ristorante (East Hollywood)and Casita Del Campo (Silverlake); and the classic The Raymond 1886 Restaurant.

(1) Back to the Beach, Santa Monica

A place that reminds you of why you live in LA just minutes down the Pacific Coast Highway off the 10 freeway. Coming out of the tunnel and seeing the ocean is one of my favorites views in town. Owner Fred Deni is on hand, with decades of ownership behind him. He oversees a seamless operation of a staff happy to be there, too.

Plant your feet on a solid floor or at a table on the beach. The simple menu of favorites, salads & sandwiches, is capped by the best baker in town’s desserts (including my favorite lemon hazelnut torte). You just want lunch to last and last, and stay all day – and we always do.

(2) Tiato Kitchen + Venue, literally tucked into a tree-filled Santa Monica neighborhood so that it is hidden from street view, has no rival as the prettiest, most lush indoor-outdoor garden eatery, let alone the city’s biggest outside dining space. Indoors, the soaring ceilings and polished concrete floors, reclaimed wood furniture and eco-friendly materials lend an organic sensibility and a contemporary sense of grandeur at the same time.

It is fitting that Tiato  is named after the “tia to” Vietnamese perilla plant, which has a fresh flavor similar to the Japanese herb shiso.  It is one of Catherine’s favorite. The Vegetarian, Vegan, Dairy-free and Gluten-free menu is dotted with ingredients like  kale, blueberries veggie smoothies and antioxidant-rich ingredients.  Health conscious dishes even include a Kale Caesar Salad. An described the food as “California-inspired Vietnamese and Asian-inspired California cuisine.’

 Fresh Pressed Juices can turn out to be a welcome meal in itself.  We love the name and ingredients of the rich Royal detox (beet, carrot and green apple) and the Green Goddess (broccoli, celery, green apple, honeydew and spinach). The cafe also offers draft and bottled beers, organic wines and a sake bar.

Fresh herbs abound in the outdoor garden and are used in the kitchen whenever possible. Meyer lemons, kaffir limes, blood oranges, mulberries and bushels of herbs  grow seasonally. What makes the original east-west fusion Chicken Banh Mi Burger ($12), special, along with the house-made potato chips, pillowy brioche bun and spicy mayo is that the veggie slaw is pickled and dotted with cilantro grown in the garden.

Espressos and warm over-sized chocolate cookies are favorite customer picks.  The Tiato muffin is usually sold out by the afternoon.

(3) Marino Ristaurante

Friend and second generation proprietor, Mario Marino, and I daydreamed about the day when the family could create backyard al fresco dining area under an old olive tree in the back of the restaurant. And the pandemic made it happen, with the feeling of some good out of the overall. It had the the same immaculate service and authentic Neapolitan cuisine. Chef Sal heads the kitchen and Mario is “front of the house” as always. Consistent classic southern Italian cuisine in a white tablecloth setting – whole branzino offered three ways; roman bread; ricotta cheesecake; the best anti pasti in the world. Legendary Dad Ciro Marino started 50 years ago and would be proud.

And summer is tomato season. It was Marino Ristorante Chef, Sal Marino, put one on a plate, insisting on dotting it with salt, and I fell in love. But until now it was farmers market, Melissa’s Produce when available or nothing.

(4) Casita del Campo

A historic, neighborhood place for all ages with delicious, carefully made Mexican food — founded by one of the dancers in West Side Story for his entertainment friends! Patio, dining room, private room seating makes any lunch or party special. Excellent, friendly service and parking lot out back!

The Casita de Campo patio carved out of the back parking lot behind the restaurant is new. It is relaxing and lively with beautiful plants and fountain. After an inconsistent winter-spring season, the patio is once again open for dining with protocols in place. And the same attentive staff is there.

The original recipes and cooking practices have stayed the same since the day the restaurant opened 57 years ago. Every morning, fresh vegetables are chopped for the tasty salsa, the guacamole and chips all made fresh daily as evident in the enormous amount of food carried out from the kitchen. The new vegan menu items such as the tacos and fajitas, already popular with customers, reflect the current health-conscious times and neighborhood’s gentrification.

The Pasadena’s Craftsman cottage on South Fair Oaks Avenue with its high-ceiling, captivating veranda is another nostalgic nod to the past.  The Grand Raymond Hotel at one time fronted this South Pasadena estate and its spirit lives on.

It’s always fun to people watch and just relax after pulling into the shady glen of patio, a sharp turn off the road just northwest of the Arroyo Freeway, and out of the blazing sun outside.

Craftsman restaurant and handcrafted cocktail bar kick-off the fall season with an extraordinary spirits pairing dinner created by Chef David Féau for a Five-Day Staycation at The Raymond 1886,  Tuesday-Friday, October 6 -10, 2020.  The tasting Menu ($75 per person) is offered on The Raymond 1886’s three patios, or for home dining by way of Takeout or Delivery.

We had the privilege of tasting the food of  world-class Chef David Féau’s at the opening of the Wally’s Santa Monica, where he was the most engaging host at table, and so generous with his time and information.   At the time we did not know that he was responsible for the lifetime memory feast hosted by Wally’s Beverly Hills for the Boredeaux Wine Producers which put on the table almost every item on the mean.  Heaven.  These  literal cathedrals to food and wine were as perfect an urban a setting for Chef Féau’s exquisite dishes as The Raymond 1886 is for the menu inspired by its more rustic setting that reflects rural upbringing of the chef.

 

Chef David Féau (pronounced Fay-o) grew up in the kitchen cooking with his mother in France. His father farmed throughout the year, which gave David the opportunity to pick and prepare his own fresh vegetables for meals even as a youngster.  It inspired him to prepare healthy, delicious meals in the kitchen throughout his childhood, and throughout his illustrious culinary career.

Chef Féau earned his degree in classic cuisine at L’Ecole Hotelière, Hélène Boucher in his home-town of Le Mans, France.  His credentials include honing his culinary and managerial skills under the guidance of famed chef Guy Savoy in Paris. Féau served as Executive Chef of Le Miravile, a Michelin Star rated restaurant in Paris, and was named one of the “Six Best Chefs in France Under 30 Years Old” by Le Chef Magazine.  Moving to New York in 2001 to head the kitchens of the famed Lutèce, earning accolades and awards from Mobil and Forbes Travel Guide for the flagship and the Las Vegas restaurants.   In 2006, Chef Féau moved west, serving with the Patina Group as the Executive Chef of Café Pinot (spa cuisine) , then Corporate Executive Chef of the entire Patina Restaurant Group.  In 2010 Chef Féau opened The Royce restaurant at The Langham Hotel in Pasadena, California, where he developed a award-winning clean and light French menu.

In 2011, Chef Féau’s honors include being  featured among an elite group of “Top French Chefs in the U.S.” by Wine Spectator in 2011,  and he was also named “Best Chef of the Year” by Los Angeles Magazine. In 2014 Chef Féau launched a gourmet catering company named “Je- Cook,” in which he also introduced featured brand products.   In May 2015 Chef Féau was hired by the owners of Wally’s Wine and Spirits to create and develop a new restaurant concept for their new Beverly Hills and Santa Monica shrines to wine and fine foods. In March 2019 Chef David Féau had the prestigious honor of being inducted as a “Master Chef of France” by the Master French Chefs Commitée.
